February 2019 Favourites List

I'm writing this blog post in the midst of a strange heatwave in the UK. Yes, in February. A heatwave! It is rather odd to have sunshine streaming through the window and the mercury reach 17 degrees (apparently we have had as high as 20 in the south east!). It is making me feel like Spring is here, and the days are getting longer.

My students in the meantime are getting ready to take their assessments. Naturally, I am wishing them well with every fibre of my being. Good luck, students!

This month I was very fortunate to have had two wonderful people guest post on my two blogs. I am so lucky that I have amazing online friends.

My first guest post was by UK barrister and trainee Attorney of Trinidad and Tobago, Brian Mondoh, writing about mental health at the Bar. I was honoured to host this post, because it is vital that people who work in the high stakes and high stress legal profession look after themselves, not just physically, but mentally. I've posted the link below, it is on my Snig's Classroom blog.

My second guest post is a delicious guest recipe post from Adrian Critten, one of my Twitter friends who loves to chat about food and loves to cook. His recipe "Adey's lamb with Parmesan champ and blackberry jus", was meant to be a Valentine's day cook out. Sadly, I missed out this Valentine's day as I was teaching an evening class to my civil advocacy part timers. (Waves to my group.) However, I have made it since and it is just as tasty as it looks!

I don't have an awful lot to say for myself this month. I've been kept very busy with work, so other than a little home cooking, I've not been out and about much. So this month's pictures, very simply, are my latest cooking escapades.

This week Theresa May admitted she scrapes the mould off jam to eat it. Personally, I use a different knife to butter my toast, because the contamination of the jam with butter causes the mould. So does bread crumbs getting into the jam. Others use a jam spoon. But which foods can you safely eat which have a touch of mould? https://www.independent.co.uk/life-style/food-and-drink/mouldy-food-safe-eat-theresa-may-jam-bread-cheese-meat-fruit-vegetables-a8777181.html

20 y/o student dies after eating unrefrigerated pasta left on worktop for five days. It is thought bacterial toxins caused his liver to fail. Please - refrigerate your leftovers and don't keep them hanging around too long. Reheat until piping hot. Don't panic about reheating rice, pasta or noodles. Just make sure you heat through thoroughly!
